Forgive the stupid question from a newbie: can you take one team, say Liverpool, and play their league schedule and other tournaments, the way we’d use the Cowboys and play their season?

Not sure if I’m understanding this right but yes you can just play as one team.
In career mode you only pick one team & play as their schedule until you move on or get sacked.
However in tournament mode you can still only pick one team, play the real life premier league fixtures, then you can start a fa cup in tournament mode & just play as one team, same for any tournament in the game.

Awesome ty! So if I pick Liverpool I can play their premier season…. And for example if I make champions league do you get to play that too? Or is that only a separate mode.Comment

Yep that’s right, so this season they were in Europa league & if you finish the season high enough, next season you’ll qualify for the champions league.
Or you could choose the champions league in tournament mode & swap them with another English club that qualified this season.
